The first layer of the eggshell inner membrane (called Phoenix Clothes by the second part of the Chinese Pharmacopoeia. Its main components are fibrin, a complex protein composed of keratin and mucopolysaccharides, accounting for 15-17% of the total weight of the eggshell); the second layer of the eggshell outer membrane; the third layer of the papillary conical layer; the fourth layer of the gate-like layer (sponge layer) and the fifth layer of the eggshell membrane. The formation process of eggshell is a shellless egg - inner membrane (keratin membrane-protein fiber) - outer membrane (the basis of the formation of eggshell) - nipple layer - sponge layer (determining the thickness and hardness of the eggshell, CaCO3) - outer membrane (helps to maintain the strength and keep freshness of the eggshell).
The structure of the egg shell is porous, and generally the egg shell is porous and breathable to facilitate metabolism during the evolution of internal life. The breathability here refers to air, and of course, includes the oxygen in it. Generally, freshly produced eggs have a small air chamber. Due to the drop in temperature, the egg yolks shrink, and the air chamber becomes larger. As the storage time increases, nutrient consumption and water evaporate, the air chamber will gradually increase. If the egg is a fertilized egg, when the air chamber exceeds 1/3, the hatching value will be lost.

Use
